Apricot Flip

A flip is a drink that includes sugar and is shaken with an egg. In place of the egg, this recipe calls for aquafaba — that remarkable liquid left over from chickpeas — to create its thick, smooth texture.

Ingredients

Ice cubes

3 oz (90 mL) apricot juice, chilled

1 1/2 oz aquafaba (page 38)

1 oz (30 mL) Lemon Lime Shrub (page 35)

1/2 oz (15 mL) Vanilla Syrup or Almond Syrup (page 17, Mix It Up)

1 oz (30 mL) club soda

1 sprig fresh thyme or other fresh herb (see Tips)

Instructions

1. Fill a cocktail shaker halfway with ice cubes and add apricot juice, aquafaba, Lemon Lime Shrub and Vanilla Syrup. 

2. Shake until chilled and foamy. Add club soda and stir.

3. Strain into a glass.

4. Using a spoon, take the froth that’s left in the shaker and use it to top the cocktail. Garnish with thyme.

Tips

The thyme garnish is simply to add some color. If you have rosemary, lemon balm, mint or sage, you can use one of those in place of the thyme.

A coupe, if you have one, is a great choice for this flip. It’s perfect for showing off the pretty froth.
