Don Mercer, Ph.D., P.Eng., FIAFoST,  is a professional engineer and Fellow of the International Academy of Food Science and Technology. He retired in 2024 after 27 years as a faculty member of the Department of Food Science at the University of Guelph.  Prior to this, Don served 14 years as Senior Research Engineer with Kraft-General Foods Canada, and 10 years with Agriculture and Agri-Food Canada.
